    Baked Pasta with Italian Sausage and Roasted Vegetables

    How's everything going for you this week? It's fall already but the weather is still pretty warm in San Diego. Nonetheless we are getting ready for Halloween.  My kids are so excited for trick or treating and have their Halloween costumes all set. We may go to Legoland as they have a ‘Brick or Treat’ event going on.

    I made this baked pasta with sausage and vegetables yesterday. Very simple ingredients, with a couple of extra steps here and there but still pretty easy to make. The important key to making a better baked pasta is to intentionally undercook pasta in its boiling phase, as it will continue to cook in the oven (especially when it goes into a sauce).

    Tips to Make a Better Baked Pasta 

    1. Use the right noodle such as ziti, rigatoni, riccioli, or rocchetti.
    2. Undercooked your pasta. Cook your pasta for about 5 minutes before draining it well and tossing it in the sauce
    3. Combine two sauces and cheeses
    4. Baking it steadily at 350 degrees
    5. Let It Rest for 5 - 10 minutes Before Digging In (source Bon Appetite)

    Baked Pasta with Italian Sausage and Roasted Vegetables

    Ingredients
     

    • Roasted Vegetables
    • 3 Zucchinis, cut into bite-size strips
    • 1 Large Red Bell Pepper, cut into bite-size strips
    • 1 Medium Onion, cut into bite-size strips
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • ½ tablespoon herb de provence
    • Pasta
    • 2 cups of uncooked ziti or penne pasta
    • 3 cups marinara sauce
    • ½ cup shredded mozzarella cheese
    • ¼ cup grated parmesan
    • ⅓ cup of additional grated parmesan and asiago for topping
    • 2 tablespoon of butter
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • Sausage
    • 1 inch package of Italian Sausage, cut into 2- pieces, thinly sliced (casings removed)
    • 1 tablespoon of olive oil

    Instructions
     

    • Pre-heat oven to 350 F
    • On a baking sheet, toss the zucchini, onion, red bell pepper with olive oil, ½ teaspoon salt, ½ teaspoon pepper and herb de provence. Roast for about 15 minutes
    • Bring a large pot of salted water to boil, then cook pasta for about 5 minutes
    • Meanwhile, in 12-inch nonstick skillet, cook sausage over medium-high heat 8 to 10 minutes or until no longer pink.
    • Mix pasta, roasted vegetables and sausage in a bowl. Sprinkle with ½ teaspoon salt ,½ teaspoon pepper then add sauce and cheese.
    • Pour all ingredients into a baking pan, top with grated parmesan, asiago and butter. Bake for about 20 - 25 minutes or until the top cheese melts.
    • Serve and enjoy!

      Baked pasta dishes are my guilty pleasure... but not lasagna... its penne baked pastas all the way for me. Yours looks truly delicious and makes me realise I haven't made baked pasta in a little while!
