Baked Pasta with Italian Sausage and Roasted Vegetables
How’s everything going for you this week? It’s fall already but the weather is still pretty warm in San Diego. Nonetheless we are getting ready for Halloween. My kids are so excited for trick or treating and have their Halloween costumes all set. We may go to Legoland as they have a ‘Brick or Treat’ event going on.
I made this baked pasta with sausage and vegetables yesterday. Very simple ingredients, with a couple of extra steps here and there but still pretty easy to make. The important key to making a better baked pasta is to intentionally undercook pasta in its boiling phase, as it will continue to cook in the oven (especially when it goes into a sauce).
Tips to Make a Better Baked Pasta
- Use the right noodle such as ziti, rigatoni, riccioli, or rocchetti.
- Undercooked your pasta. Cook your pasta for about 5 minutes before draining it well and tossing it in the sauce
- Combine two sauces and cheeses
- Baking it steadily at 350 degrees
- Let It Rest for 5 – 10 minutes Before Digging In (source Bon Appetite)
