A delicious asian fusion recipe that you could make at home, and it’s budget friendly!  I chose Edamame Noodles because this type of noodle contains low carbs yet is high in fiber. I picked up a box from Costco, only paid $9.99 per box and It’s an organic product.

LOW CARB EDAMAME NOODLE

Use Edamame Noodle or any kind of noodle that tickles your fancy. Simply boil them and follow the instructions on the packaging

Edamame Noodle with Shiitake Mushrooms

Ingredients
  • Edamame Noodles or spaghetti
  • For Toppings :
  • Shiitake Mushroom 10
  • lb Tofu or Chicken or Pork or Veggies 1
  • 3 Tablespoon Low Sodium Soy Sauce
  • 1 Tablespoon Oyster Sauce or Hoisin Sauce if you love it sweet
  • 1 Tablespoon Rice Vinegar
  • 1 Teaspoon Fresh Minced Ginger
  • 1 Teaspoon Fresh Minced Garlic
  • 1 1/2 Teaspoon Sesame Oil
  • 3 - 4 Green Onions Chopped
  • 1 1/2 Tablespoon Vegetable Oil
  • Salt and Pepper if needed
  • Chili Flakes if needed
Instructions
  1. Add 1 1/2 Tablespoon Vegetable Oil and stir Tofu or Chicken or Pork or Veggies in a wok and over medium-high heat. Pour the mixture of Rice Vinegar, Oyster Sauce or Hoisin Sauce, Soy Sauce, Minced Ginger, Garlic, Sesame Oil over the meat or vegetables then stir fry for at least 3 minutes, until cooked.
  2. Stir in cooked pasta, serve and enjoy
