    Shiitake Mushroom Soba Salad

    This cold shiitake mushroom soba noodle salad is perfect for lunch or as a side-dish and is very filling. The peanut sauce dressing boosts the flavor to a new level.  This recipe will be ready in less than 15 minutes.

    Shiitake Mushroom Soba Salad

    Ingredients
     

    • 8 ounces soba noodle
    • 2 cups shredded carrots
    • ½ cup sliced fresh green beans
    • micro greens, quantity as desired
    • 3-4 cups sliced grilled shiitake mushrooms
    • 2 tablespoons olive oil
    • 2 teaspoons ground lemon pepper . I purchased this product at Trader's Joe, no salt added
    • 4 tablespoons rice vinegar
    • ¾ cup creamy peanut butter
    • ⅓ cup low sodium sauce
    • 2 tablespoons olive oil
    • Juice from ½ fresh squeeze lime
    • 1 clove garlic, minced
    • 1 inch ginger, peeled and grated
    • 3 tablespoons honey
    • 1 tablespoon toasted sesame oil
    • salt/pepper

    Instructions
     

    • Cook noodles according to the packaging.
    • Meanwhile, clean, wash and slice the shiitake mushrooms and drizzle with olive oil and lemon pepper. Grilled until soft and cooked for about 3 minutes.
    • In a mixing bowl add mushrooms, rice, vinegar, peanut butter, low sodium soy sauce, olive oil, lime juice, garlic, ginger, honey and sesame oil until well blended.
    • Taste and season with salt/pepper
    • Add soba noodles with other contents in a salad bowl then drizzle with peanut salad dressing. Serve

      I've never used this type of mushroom before, but I love mushrooms in generally, so I bet I'd love this one!

      Wow great recipe I love soba and shiitake mushroom but I had never tried them together in one dish. Thanks for sharing I will love to try this recipe in the future.

      This recipe is good, I actually made it last night. It can have the oils cut and even the Peanut butter - I used what I had and I would not have wanted the full 3/4 cup. I did not have the green beans or micro greens, wish I had had both to cut the heavier sauce. I will make this again, it is really filling.

      This was a bit heavy with the sauce - I think you could lighten it up - more veggies.
