Ingredients
  • Soba Noodle
  • 1 cup julienned carrots
  • Sesame Oil
  • Fried Tofu :
  • Pat Dry Tofu
  • 2 teaspoons garlic powder
  • Oil
  • Peanut Dressing :
  • 3/4 cup creamy peanut butter unsweetened
  • 1/3 cup low-sodium soy sauce
  • 3 tablespoons honey
  • 4 tablespoons seasoned rice vinegar
  • 2 tablespoons minced garlic
  • 1 tablespoon minced fresh ginger
  • Salt/Pepper
Instructions
  1. Cook Soba Noodles according to package directions, 6 to 7 minutes. Drain the noodle under cool water and drizzle with sesame oil
  2. For Tofu : Drain the tofu for at least 15 minutes with paper towels. Mix together the tofu with the salt, garlic powder, and black pepper, and allow to marinate for 1-2 hours in the refrigerator. Fry tofu in large skillet (medium to high heat)
  3. Saute Garlic and Ginger for about 2 minutes. Put all peanut dressing ingredients in a blender or food processor. Blend until completely smooth.
  4. Mix together the carrots and the noodles in a large mixing bowl. Add peanuts dressing and serve with your favorite vegetable
  5. Quick tips : You can also mix and shake all peanut ingredients above in a mason jar.
