Sausage Breakfast Skillet with Potatoes and Vegetables

Ingredients

  • 8 oz. Jimmy Dean Regular Premium Pork Sausage Roll
  • 3 slices bacon
  • 2 cups chopped russet potatoes cut into small cubes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup chopped green bell pepper use more according to your liking
  • 1/3 cup chopped red bell pepper use more according to your liking
  • 2 cups fresh chopped Lacinato kale
  • 1/2 teaspoon smoked paprika powder

Instructions

  • In a skillet, cook the Jimmy Dean Regular Premium Pork Sausage Roll on medium heat for about 14 minutes. Set aside.
  • Place bacon in a large skillet. Cook over medium heat until brown. Set aside and cut into small pieces. Do not remove the oil from the pan.
  • Add potatoes to the same skillet, season with  1/4 teaspoon salt and 1/4 teaspoon pepper. Cook on medium heat until browned for about 20 minutes. Stir occasionally.
  • Add in green bell pepper, red bell pepper and cook for about 2-3 minutes.
  • Add the cooked Jimmy Dean Regular Premium Pork Sausage Roll into the skillet. Add smoked paprika and keep stirring for about 1 minute.
  • Add chopped kale and cook until vegetables are tender.
  • Stir in chopped crispy bacon and season with salt and pepper if needed.
  • Remove from the heat and serve immediately.
