Ingredients
 

  • 6 large yellow peaches, (chopped, about 7 cups)
  • 1 tablespoon fresh lemon juice
  • ¼ cup white sugar

For Topping (or Batter)

To cook Peaches:

  • Preheat oven to 425°F.
  • Cut the peach into small pieces but not too thin (about 1 cm). Transfer into a large bowl and season with sugar and lemon juice. Place the peach mixture into a large baking dish and cook for 10 minutes.

To make Batter:

  • In a medium mixing bowl, stir together all-purpose flour, baking powder, salt, sugar, vanilla extract, and cinnamon. Blend in butter until mixture resembles coarse meal, add milk until combined.

To Cook the Cobbler:

  • Remove peaches from the oven. Use a cookie dough spoon or regular spoon to scoop out a small amount of batter to spread over the peaches. Perfection is not needed during this process because the topping will spread as it bakes.
  • Lower the oven temperature to 375°F
  • Bake the peach cobbler for about 30 minutes or until topping is golden.

To serve:

  • Enjoy warm or cold with ice cream.
