Air Fryer Fish Sticks

Rika
This air fryer fish sticks recipe is absolutely the healthiest way to fry fish fingers. They are just crispy enough but not greasy, which is due to using less oil compared to the traditional deep-fried method.

  • 1 egg, (lightly beaten)
  • 1 tablespoon milk

Breadcrumb Mixture:

Instructions

  • Pat the fish fillets dry with paper towels. Cut into 1-inch strips. Season with salt and black pepper. Set aside.
  • Put the panko breadcrumb in a large ziplock. Use a rolling pin to finely ground the breadcrumb. Set aside.
  • In a first bowl, add all-purpose flour.
In a second bowl, lightly beat the egg and add milk. Whisk to combine.
In a third bowl, mix all of the breadcrumb mixture ingredients. Stir to combine.
  • Coat the fish sticks in the flour; shake off excess flour. Dip the fish sticks in the egg and milk mixture, allow the excess to drip off. Toss the fish into the breadcrumb mixture; gently pressing to coat.
  • Preheat the air fryer to 400°F. Lightly grease the air fryer basket with oil.
  • Place the fish sticks on a basket in a single layer. Cook for 6-8 minutes, flipping halfway through.
Check for doneness, the internal temperature should register at 145°F.

Notes

How to double the recipe: Simply repeat the steps and work in multiple batches instead of all at once to prevent soggy and messy breadcrumbs.
How to store the leftover fish sticks:  Place the leftover in an airtight container. You can store it in the refrigerator for up to 4 days or up to 18 months in the freezer.
You can serve these air fryer sticks with honey mustard or ketchup.
Please note that cooking time will vary depending on a variety of other factors, including types of air fryers and air fryer quality.
Air fryer basket tends to cook foods a little faster than the air fryer oven. In this recipe, I used my Gourmia 8Qt Air Fryer
