This keto mashed cauliflower is the perfect low-carb alternative to mashed potatoes. This comfort food tastes just as good as mashed potatoes but without the extra calories. It's so creamy, garlicky, thick, fluffy, and delicious. You can pair this low-carb side dish with pretty much anything, such as grilled meat, stew, or vegetables.

  • Clean and cut cauliflower into small pieces. Put them in a bowl, cover with plastic wrap, pierce the film then cook in the microwave for 10 minutes. Do not cool.
  • In a saucepan, melt butter over medium-high heat. Add garlic and cook just until fragrant for about 30 seconds, stirring often.
  • Carefully put the cooked cauliflower, garlic butter, salt, and cream cheese in a food processor. Blend the mixture at high speed until smooth. You may need to work in multiple batches depending on the size of your food processor.

Notes

Cauliflower cooking alternatives. You can steam for about 15 minutes or cook in boiling water for about 6 minutes or longer until fully cooked on high heat.
Be sure to drain well and remove the excess water with paper towels before adding the remaining ingredients.
Storing. Place the leftover mashed cauliflower in an airtight container. Properly stored, the leftover will last up to 3 days in the fridge or up to 3 months in the freezer.
Reheating. If it's frozen, thaw first before reheating. Place the mashed cauliflower in a microwave-safe bowl. Cover the bowl with plastic wrap and reheat in the microwave for 50 seconds or longer on a high setting. Or, put the leftover in an oven-safe baking dish and reheat it in the oven at 350°F for 20 minutes or until the internal temperature registers at 165°F.
