Spinach Corn Soup

  • 3 cups of water or vegetable broth orchicken broth
  • 5 cups of fresh spinach
  • 3 Cups of Frozen or Fresh Corn
  • 1 Cloves Garlic Sliced thin
  • Teaspoon Optional : 1 of Sugar
  • 1 inch of Ginger
  • Salt and Pepper


  • Add the broth/water, ginger and garlic in a large saucepan. Let the soup come to a boil, then reduce the heat to low and gently simmer for about 10 - 15 minutes
  • Add corn and season with sugar, salt/pepper. Stirring occasionally, for about 2 minutes
  • Add fresh spinach and cook for about 1 minute
  • Serve and Enjoy
