Southwestern Crispy Tenders Salad with Chipotle Salad Dressing

Chipotle Salad Dressing:

  • 2 chipotle peppers + 1 tablespoon adobo juice, chipotle pepper in adobo sauce can be found in a can
  • ½ cup + 6 tablespoons avocado oil
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 tablespoon apple cider vinegar
  • 13/4 tablespoons agave nectar, (add more according to your liking)
  • 1 tablespoon fresh lime juice
  • ½ - 1 tablespoon white wine vinegar

For Salad:

  • 2 green lettuce heads, washed and chopped into small pieces
  • 1 can unsalted cooked black beans
  • 1 mango, cut into small bite pieces
  • 10 grape Tomatoes
  • ½ cup cooked corn
  • cup sliced red onion
  • 1 whole avocado, cut into small pieces
  • 1 bag Gardein Crispy Tenders, (oven baked)


Salad Dressing:

  • In a food processor, mix all the salad dressing ingredients and pulse until well blended. Put the salad dressing in an air-tight container and keep it in the refrigerator until it’s ready to use.

For Salad:

  • Place all the fresh salad ingredients in a big salad mixing bowl, serve with Chipotle Salad Dressing and Gardein Crispy Tenders.
