Ingredients
 

  • pounds sweet potato
  • tablespoon avocado oil , *or canola, peanut, grapeseed oil*
  • ¾ teaspoon garlic powder
  • ¾ teaspoon ground paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Wash and cut the sweet potatoes into thin sticks, about ¼ inch thickness. You can peel or leave the skin on.
  • Soak potatoes in cold water to remove the excess starch, from anywhere between 30 minutes to overnight. 
    After soaking, use paper towels to dry them off really well so they don't steam during air frying.
  • Place the fries in a large mixing bowl. Add the seasoning and oil, toss to coat.
  • Preheat the air fryer to 360°F.
  • Place the sweet potato sticks on a basket in a single layer. Do not overcrowd the basket, a maximum of 5 oz per each batch.
  • Cook for 10-12 minutes. Shake and toss the fries every 5 minutes.
