Cook noodles according to the packaging.
Meanwhile, clean, wash and slice the shiitake mushrooms and drizzle with olive oil and lemon pepper. Grilled until soft and cooked for about 3 minutes.
In a mixing bowl add mushrooms, rice, vinegar, peanut butter, low sodium soy sauce, olive oil, lime juice, garlic, ginger, honey and sesame oil until well blended.
Taste and season with salt/pepper
Add soba noodles with other contents in a salad bowl then drizzle with peanut salad dressing. Serve
