Israeli Couscous

Ingredients
 

  • 16 oz of Israeli Couscous
  • 5 tablespoons of butter
  • 5 shallots, chopped
  • 1 medium cinnamon stick
  • 2 leaves bay
  • 4 cups of chicken broth
  • ½ cup of fresh parsley
  • salt/pepper
  • 2 Tablespoons of fresh lemon juice
  • ¾ cup raisins

Instructions
 

  • Melt 5 tablespoons of butter in a large pan then add shallots and couscous. Saute for about 10 minutes (until golden) and keep stirring
  • Add cinnamon stick and bay leaves. Stir often for about 5 minutes
  • Add broth then reduce heat to low. Cover and simmer until couscous is tender
  • Stir in Parsley, raisins and salt/pepper to preferred taste. Serve.
