Ingredients
 

  • 2 pounds butternut squash cubes (an-inch cubes, peeled and seeded)
  • 1 tablespoon pure honey
  • 2 tablespoons olive or avocado oil
  • ½ teaspoon ground cinnamon (or more to taste)
  • ¼ teaspoon sea salt (or more to taste)

Method

  1. Preheat your air fryer to 400°F (200°C).
  2. In a mixing bowl, combine the oil, honey, cinnamon, and salt.
  3. Place butternut squash cubes in a large bowl or zip lock. Pour the seasoning mixture over the butternut squash cubes and gently massage it to ensure even coating.
  4. Arrange seasoned butternut squash in a single layer in the air fryer basket.
  5. Cook for about 16 minutes or until tender, shaking/flipping every 3-4 minutes for even cooking. Watch the cooking process carefully to prevent burning
  6. Serve immediately and drizzle with extra honey on top, if desired.

Notes

One Layer Only: Put the seasoned butternut squash pieces in one layer in the air fryer basket or tray. Don't let them overlap or pile on top of each other.
Check If It's Done: Keep an eye on the squash as it cooks. You can check if it's ready by poking it with a fork or knife. It should be soft when it's done.
Shake or Flip: Shake the basket or turn the squash pieces over every 3-4 minutes. This helps them cook evenly on all sides and to prevent burning.
