Greek Lemon Potatoes

Golden, crispy, and bursting with lemony Greek flavor, these Greek Lemon Potatoes are the perfect side for chicken, lamb, or a fresh salad. Easy, oven-baked, and packed with oregano and olive oil, they're a simple Mediterranean favorite!

For Serving:
  • lemon zest
  • freshly chopped fresh oregano or parsley

Method

  1. Prepare the potatoes: Peel and cut potatoes into thick wedges. Arrange them in a single layer in a large baking pan (9x13 inch).
  2. Make the marinade: In a bowl, whisk together chicken broth, olive oil, lemon juice, garlic, oregano, and salt.
  3. Marinate the potatoes: Pour the marinade over the potatoes, cover the pan with foil or plastic wrap, and marinate in the fridge for at least two hours or up to overnight.
  4. Prepare the oven: Remove the marinated potatoes from fridge. Preheat the oven to 400°F and choose the conventional bake setting. 
  5. Roast: Roast the potatoes uncovered for about 45-60 minutes, turning once halfway through, until the potatoes are golden, crispy on the edges, and have absorbed most of the liquid.
  6. Serve: Sprinkle with lemon zest and freshly chopped oregano leaves or parsley. Serve immediately.

Notes

Marinate: If you are short on time, you can let the potatoes marinate while the oven preheats. Personally I like to marinate them overnight. 
Potato wedges thickness: Cut the potatoes into wedges about 1 to 1½ inches thick. This size allows them to cook evenly. Crispy on the outside and tender on the inside without falling apart in the oven. 
Grated garlic: Grate the garlic using a fine grater. It helps mix evenly and keeps it from burning while roasting. 
Choose conventional bake. Using the conventional bake setting in your oven helps the potatoes roast evenly and get that perfect golden color.
Extra seasoning: If you like a bit of extra flavor, sprinkle some paprika over the potatoes before serving. 
Crisp potatoes: If your potatoes aren't as crispy as you'd like, you can run them under the broiler for a few minutes, just watch carefully to prevent burning.
