  1. Heat oil in a large Dutch oven. Cook the onion over medium heat for about 8 minutes or until softened. Add garlic and red chili pepper, stirring until fragrant.
  2. Gradually add collard greens to the pot. Stir them until they begin to wilt.
  3. Pour in broth and apple cider vinegar. Give it a stir. Cover the pot and reduce the heat to low. Simmer for about 40-45 minutes or until the collard greens reach a tender consistency. Add salt and black pepper to taste.
