One-Pot Penne Pasta

This one-pot penne pasta with sausage is a skillet meal that you can easily put together in the most effortless way

Equipment

  • deep skillet or dutch oven with lid

Ingredients

  • 1 pound sweet Italian chicken sausage
  • 12 oz penne pasta
  • 1 tablespoon unsalted butter
  • ½ cup diced yellow onion
  • ½ tablespoon minced garlic
  • 14.5 oz (1 can) diced tomatoes
  • 1 cup tomato sauce
  • cups chicken broth
  • ¾ cup heavy cream
  • ¼ teaspoon dried basil (or use Italian seasoning) use more according to your liking
  • ¼ cup grated parmesan or pecorino romano cheese (use more according to your liking)
Optional:
  • 1 cup shredded or shaved mozzarella cheese (lightly packed)
  • chopped parsley (to serve)
  • salt and pepper (if needed)
  • a pinch of red pepper flakes (or more if you love spicy)

Method

  1. Heat large skillet or dutch oven over medium-high heat. Add sausage; cook undisturbed for about 1 minute, then break apart with a spoon to crumble. Cook for about 2 minutes.
  2. Add onion, and butter. Cook and keep stirring for 4 minutes.
  3. Add garlic. Cook and keep stirring for 1 minute.
  4. Add dried basil or Italian seasoning, red pepper flakes, diced tomatoes, broth, heavy cream, tomato sauce, and uncooked pasta into the skillet to stir to combine. Bring to a boil then lower the heat to a medium-low setting and cook 15 minutes or until pasta is tender. Adjust seasoning with salt/pepper or red pepper flakes if needed.
    Be sure to keep stirring and scraping the bottom of the pot every 3 minutes to prevent the food from sticking and burning.
    Turn off the heat.
  5. Sprinkle with Parmesan or Pecorino Romano cheese, and serve with additional cheese if needed.
  6. (Optional): Add shredded or shaved mozzarella cheese on top of the pasta. Let stand, covered for 5 minutes or until cheese is melted. Sprinkle with parsley.
