Pork Tenderloin Sandwich with Carrot Slaw

Ingredients
 

Carrot Slaw (up to 6 servings):
  • 1 cup shaved/spiralized carrot
  • ½ lemon juiced
  • 1 teaspoon agave nectar
  • 1 tablespoons chopped chives
  • 4-5 tablespoons olive oil
  • 2 teaspoons Dijon mustard
  • Black pepper to taste
Pork Tenderloin Sandwich with Carrot Slaw (2 servings):
  • 4 slices of sandwich bread of your choice
  • 4 pieces fresh lettuce leaves
  • 8 medium slices of cooked Roasted Garlic & Herb Fresh Pork Tenderloin (just follow the directions on the packaging)
  • 4 tablespoons carrot slaw
  • 4-6 slices fresh cucumber
  • 4 slices fresh tomatoes
  • 2-4 slices of cheese of your choice such as: mozzarella, provolone

Method

To make carrot slaw:
  1. Mix all the ingredients in a bowl, easy as that! Store the carrot slaw in an airtight container and put in a fridge.
To build your Pork Tenderloin Sandwich with Carrot Slaw per serving:
  1. Top each slice of bread with 2 pieces of lettuce leaves, 3-4 slices of pork tenderloin , 2 tablespoons of carrot slaw, 2-3 slices of cucumber, 2 slices of tomatoes, cheese and a slice of bread on top.
