Slow Cooker Sausage Gnocchi Soup

This easy-to-follow slow cooker creamy sausage gnocchi soup recipe takes the hassle out of cooking by letting your slow cooker do the work, making it an ideal choice for busy days.

Ingredients

  • 1 pound shelf-stable gnocchi
  • 1 tablespoon olive oil
  • 1 pound ground mild Italian sausage
  • 1 tablespoon minced garlic
  • cups diced yellow onion
  • ¾ cup diced carrots
  • ¾ cup diced celery
  • 3 cans (14.5 oz each) low-sodium chicken broth (about 5¼ cups)
  • 1 large fresh thyme sprigs (about ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves)
  • 1 teaspoon poultry seasoning
  • 1 bay leaf
  • 1 cup heavy cream
  • 1 tablespoon corn starch (mix with 1 tablespoon of water)
  • 2 cups chopped kale
  • salt and black pepper (to taste)

Method

  1. Heat oil in a large skillet and brown the sausage over medium-high heat for about 6 minutes.
  2. Add onion and garlic to the skillet. Cook for 2-3 minutes until they become fragrant and slightly softened.
  3. Transfer sausage, onion, garlic, carrot, celery, broth, poultry seasoning, thyme, and bay leaf. Cook on low for 6-7 hours or high for 4 hours.
  4. Add gnocchi and a cornstarch-water mixture to the soup. Cook on high for approximately 10 minutes.
  5. Mix in heavy cream and kale, cooking for another 15 minutes or until kale wilts and flavors blend. Season with salt and black pepper.

Notes
