Ingredients

Method

  1. In a Dutch oven, cook the bacon on medium heat for 8-10 minutes or until crispy.
  2. Transfer the crispy bacon bits to a plate, and set it aside. Pour the bacon grease into a heat-proof bowl and set it aside.
  3. In the same Dutch oven, add 2-3 tablespoons of bacon grease. Cook the onion for 4 minutes until soft over medium-high heat. Gently scrape up the brown bits from the bottom of the pan.
  4. Add the garlic and stir for 1 minute.
  5. Add cabbage and the remaining ingredients to the pot. Stir for 8 minutes or until the cabbage are tender-crisp.
  6. Throw the crispy bacon bits back into the pot. Stir for 1-2 minutes, just until combined. Taste and adjust the salt and other seasoning if needed.

Notes

  • Thick-sliced bacon. You can use any thick-cut bacon, except the maple syrup flavored bacon. In this recipe, I used thick-sliced bacon hickory smoked.
  • Bacon and Bacon Grease. The number of bacon and amount of bacon grease you want to use to make this recipe is dependent on your dietary preferences and taste. In my opinion, 2-3 tablespoons of bacon grease are sufficient.
  • Rendering and Crisping Bacon. The bacon should be cooked until crispy on all sides but not burnt. So please adjust the cooking time if necessary.
  • Add more seasoning. As always, use this recipe as a start. The salt contained in bacon may vary. If you are not sure how much salt to add, wait until the very last minute of cooking to add the salt (after you have added bacon bits to the mixture).
  • Storing the leftover. Transfer the leftover to an airtight container. Properly stored, it can last 3-5 days in the fridge or up to 2 months in the freezer.
