Ingredients

  • 4 skinless boneless chicken breast - cut into small bite pieces (about 1 inch cubes).
  • ¼ cup vegetable oil
  • cup pure honey
  • cup soy sauce
  • ½ teaspoon ground coriander
  • ¼ teaspoon fresh grated ginger
  • ¼ teaspoon ground black pepper
  • 2 garlic cloves {minced}
  • 2 red bell pepper {cut into small bite pieces (about 2 inch cubes)}
  • 2 green bell pepper {cut into small bite pieces (about 2 inch cubes)}
  • 1 red onion {cut into small bite pieces (about 2 inch cubes)}
  • wooden skewers

Method

  1. In a large mixing bowl, whisk together oil, honey, soy sauce, coriander, ginger, black pepper and garlic. Reserve a small amount of marinade for basting, so the basting sauce doesn't touch any raw poultry.
  2. Place the chicken, red bell peppers, green bell peppers, red onion in the bowl. Marinate in the refrigerator for at least 2 hours or overnight!
  3. To prevent wood skewers from burning, soak them in water for 1 hour or overnight before using them.
  4. Preheat the grill for high heat. 
  5. Remove chicken and vegetables from marinade and thread onto wooden skewers.
  6. Lightly oil the grill. Place the skewers on the grill and cook the chicken satay for about 4 - 5 minutes per side or until cooked. Turning and brushing kabobs with reserved marinade sauce frequently.
