Stop buying grocery store salad dressing and make your own Champagne Vinaigrette today! This refreshing salad dressing will make any veggie or salad taste even better. It's so easy to make and definitely cheaper than store-bought dressings.

  • a whisk
  • a medium mixing bowl

Ingredients

  • 6 tablespoons extra virgin olive oil or canola oil
  • 1 tablespoon champagne vinegar
  • 1 teaspoon fresh lemon juice (you can also add lemon zest for extra flavor)
  • 1 teaspoon dijon mustard
  • 2 teaspoons honey (see notes)
  • a pinch of salt and black pepper (to taste)

Method

  1. In a medium bowl, whisk together the champagne vinegar, lemon juice, dijon mustard, and honey until combined and dissolved. 
  2. Gradually add the oil while whisking rapidly in a circular motion until thickened. 
  3. Taste the dressing by dipping a piece of the greens into the dressing. See how they taste together and adjust the seasoning with lemon zest, salt, and black pepper if needed.

Notes

Sweetness. If you are sensitive to sweetness, you can always start with 1 teaspoon of honey. Taste the salad dressing and add more honey until you're happy with the result.
Storing. Serve immediately or store in an airtight container. Properly stored, it will last 3-4 days in the fridge.
