As mentioned, once you start making your own dressings and seeing how simple and healthy ingredients actually taste better, it's tough to go to the store and buy a dressing that has all of those extra, unhealthy ingredients.
To make your own Champagne Vinaigrette, you'll need those 3 basic elements of salad dressing: Oils, Acids, and Seasonings.
- Oils:
- Olive oil. It's another staple ingredient for salad dressing. It's used to disperse the vinegar in the emulsion. On top of that, olive oil is rich in healthy monounsaturated fats.
- Acids:
- Champagne Vinegar. Make sure that you find unfiltered champagne vinegar for maximum flavor. In this recipe, I used Napa Valley Naturals Vinegar that you can easily find online or at many grocery markets, such as Sprouts. Champagne vinegar can be used in many recipes to marinate chicken and fish or to be used as salad dressing and sauces.
- Lemon. In this recipe, I only added lemon juice. For extra flavor, feel free to add in the lemon zest.
- Seasonings:
- Honey. You can also use maple syrup to make it vegan or use molasses.
- Dijon Mustard. Is a vital ingredient in many salad dressing recipes. I added dijon mustard to build more complex flavors to the dressing.
- Salt and Black pepper.
How to Make Champagne Vinaigrette
The process is very simple. Basically, you just need to combine all of the ingredients and then emulsify by whisking, blending, or shaking.
- In a medium bowl, whisk together the vinegar and seasoning until combined and dissolved.
- Gradually add the oil while whisking rapidly in a circular motion until thickened.
- Taste the dressing by dipping a piece of the greens into the dressing. See how they taste together and adjust the seasoning with more salt and black pepper if needed.

- 6 tablespoons extra virgin olive oil or canola oil
- 1 tablespoon champagne vinegar
- 1 teaspoon fresh lemon juice, (you can also add lemon zest for extra flavor)
- 1 teaspoon dijon mustard
- 2 teaspoons honey , (see notes)
- a pinch of salt and black pepper, (to taste)
