Chicken Vegetable Soup

Ingredients

  • 1 pound ground chicken breast/turkey
  • ½ teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¾ teaspoon homemade poultry seasoning recipe below
  • 2 tablespoons olive oil
  • 1 cup yellow onion minced
  • 1 cup carrots diced
  • 1 cup celery diced
  • 6 cups low salt chicken broth
  • 1 cup fresh tomatoes chopped
  • 1 cup baby spinach chopped
  • optional : salt/pepper add according to your liking

Method

  1. In a mixing bowl, mix together ground chicken, black pepper, onion powder, salt and poultry seasoning
  2. Heat 1 tablespoon olive oil in a Dutch oven over medium high heat..
  3. Add the chicken, keep stirring and breaking the meat into small pieces. Cook until the chicken is no longer pink. Set aside
  4. Heat 1 tablespoon olive oil in a Dutch oven and stir in the yellow onion, carrots, celery. Cook until crisp-tender for about 3-5 minutes
  5. Add the broth, bring to a boil. Reduce heat, and simmer about 15 to 20 minutes
  6. Stir in the ground chicken, tomatoes and cook for 5 minutes
  7. Stir in the spinach and cook for 1 minute
  8. Serve and enjoy
