Chicken Vegetable Soup
Ingredients
- 1 pound ground chicken breast/turkey
- ½ teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon salt
- ¾ teaspoon homemade poultry seasoning, recipe below
- 2 tablespoons olive oil
- 1 cup yellow onion, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 6 cups low salt chicken broth
- 1 cup fresh tomatoes, chopped
- 1 cup baby spinach, chopped
- optional : salt/pepper, add according to your liking
Instructions
- In a mixing bowl, mix together ground chicken, black pepper, onion powder, salt and poultry seasoning
- Heat 1 tablespoon olive oil in a Dutch oven over medium high heat..
- Add the chicken, keep stirring and breaking the meat into small pieces. Cook until the chicken is no longer pink. Set aside
- Heat 1 tablespoon olive oil in a Dutch oven and stir in the yellow onion, carrots, celery. Cook until crisp-tender for about 3-5 minutes
- Add the broth, bring to a boil. Reduce heat, and simmer about 15 to 20 minutes
- Stir in the ground chicken, tomatoes and cook for 5 minutes
- Stir in the spinach and cook for 1 minute
- Serve and enjoy

Homemade Poultry Seasoning
Ingredients
- 2 teaspoons ground sage
- 1 1 teaspoons ⁄2 ground thyme
- 1 teaspoon ground marjoram
- 3 teaspoon ⁄4 ground rosemary
- 1 teaspoon ⁄2 nutmeg
- 1 teaspoon ⁄2 finely ground black pepper
Instructions
- Mix together all ingredients and store in a clean spice bottle
