Ingredients

Method

  1. In a large wok or skillet, heat oil over medium-high heat. Cook onion and green onion (white and light green parts only) for 1 -2 minutes. Add garlic and ginger, cook for another minute.
  2. Add ground meat, a pinch of salt and black pepper to the pan. Cook for about 3 minutes or until almost cooked. Tilt the pan to drain any excess liquid using paper towels if possible.
  3. Season the meat with half of soy sauce. Add carrots and coleslaw mix. Add rice vinegar, sesame oil and the remaining soy sauce and stir until the vegetables are tender and meat is fully cooked.
  4. Taste and tweak the seasoning with salt, black pepper, soy sauce, or even a hint of sugar if desired! Serve garnished with chopped green onions (green part), fried wonton strips, and sriracha for an extra spicy kick.

Notes

Fattier Ground Meat: If your meat has more fat, like regular ground beef or pork, it's best to brown it in a separate skillet first. This lets you remove excess fat, making the final dish leaner and less greasy. Cook the meat over medium heat until browned, then drain it using a colander or paper towel-lined plate. After draining, add the meat to your stir fry along with the veggies and other ingredients. This keeps your egg roll in a bowl healthier and just as flavorful.
Soy Sauce. Be cautious with the amount of soy sauce you use, as excessive amounts can overpower the dish with a soy sauce flavor. Instead of increasing soy sauce, enhance the salty taste by incorporating salt sparingly.
Storage. Store the container in the refrigerator for up to 3-4 days or up to 2 months in the freezer.
