To make spicy chipotle mayo:

  2. In a large skillet pan, heat 1 inch of oil and until a deep-frying thermometer inserted in the oil at 375F.
  3. Cook the onion until golden (for about 2 minutes). Remove from the heat and set aside.
To build the burger:
  1. Spread a generous amount of spicy chipotle mayo on a burger bun.
  2. Layer with some fresh lettuce, pickles, sliced tomatoes, sliced red onion, burger patties, crispy bacon, optional fried onion strings, and a burger bun. Serve and enjoy!
