This Lemony Italian Sausage Pasta comes together in no time. It’s quick, easy, and uses minimal ingredients.

Ingredients

  • ½ pound Sweet Italian turkey sausage
  • 1 bunch kale (cut into small pieces)
  • 2 cups uncooked farfalle pasta
  • 4 tablespoon olive oil (divided)
  • 5 garlic cloves (sliced)
  • 1 teaspoon dried red chili pepper flakes (add more according to your liking)
  • 1 teaspoon Italian Seasoning
  • ½ fresh lemon (juiced, use more according to your liking)
  • salt/pepper (to taste)
To Serve:
  • parmesan cheese (as needed)

Method

  1. Cook the Pasta until Al Dente: Cook pasta in salted boiling water, uncovered until al dente. Remove from the heat, drain well, and reserve ¼ cup pasta cooking water for later use.
  2. Blanch kale in salted boiling water, uncovered for about 2 minutes.  Remove the kale from the heat then transfer to a bowl of cold water to stop the cooking, and drain. 
  3. Brown the Sausage: Heat about 2 tablespoons of olive oil in a skillet over moderate-high heat then cook sausage, use a spoon to break any lumps, and continue to cook until browned for about 7 minutes. Remove from the skillet and set aside.
  4. Sauté the Garlic: Add 2 tablespoons olive oil in a skillet, stir in garlic, saute until it’s fragrant. 
  5. Add the Seasonings: Add red chili pepper, Italian Seasoning, and cooked turkey sausage. Keep stirring for about 1 minute.
  6. Add kale, pasta, and ¼ cup reserved cooking water and lemon juice to skillet. Cook and stir for about 2-3 minutes.
  7. Season with salt/pepper to taste. Remove from the heat.
  8. Stir in some parmesan cheese, serve and enjoy!
