Mussels in White Wine sauce

This mussels in white wine sauce is a restaurant-quality seafood dish that can be ready in less than 30 minutes. It's so quick and it doesn't take a lot of work to put together.

Ingredients
 

  • 3 pounds mussels (scrubbed and debearded)
  • ¼ pound chorizo (chopped)
  • 1 medium onion (chopped)
  • 2 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 cup chopped fresh tomatoes
  • 1 ¼ cups dry white wine
  • ½ teaspoon salt
Optional:
  • ½ - 1 teaspoon Saffron
  • red pepper flakes
Garnish:
  • Chopped parsley
  • Grilled bread

Method

  1. In a dutch oven, put the olive oil over medium heat. Add the chopped onion and chorizo, stirring occasionally until the chopped onions soften for about 5 minutes.
  2. Add garlic, tomatoes, wine, salt and the optional ingredients: chili pepper, saffron. Simmer for about 5 minutes.
  3. Put the mussels in a dutch oven, cover, and cook at high heat, shaking the pot occasionally for about 5 minutes or until the mussels are completely open.
  4. Remove mussels from the pot to serving bowls. Discard any shells that do not open.
  5. Sprinkle with fresh parsley and serve with grilled bread.
