Cut the peach into small pieces but not too thin (about 1 cm). Transfer into a large bowl and season with sugar and lemon juice. Place the peach mixture into a large baking dish and cook for 10 minutes.
To make Batter:
In a medium mixing bowl, stir together all-purpose flour, baking powder, salt, sugar, vanilla extract, and cinnamon. Blend in butter until mixture resembles coarse meal, add milk until combined.
To Cook the Cobbler:
Remove peaches from the oven. Use a cookie dough spoon or regular spoon to scoop out a small amount of batter to spread over the peaches. Perfection is not needed during this process because the topping will spread as it bakes.
Lower the oven temperature to 375°F
Bake the peach cobbler for about 30 minutes or until topping is golden.
