Ingredients
- 6 large yellow peaches, (chopped, about 7 cups)
- 1 tablespoon fresh lemon juice
- ¼ cup white sugar
For Topping (or Batter)
- 1 cup all-purpose flour
- ยพ cup unsalted butter, (melted)
- ยฝ cup white sugar
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon ground cinnamon
- 2 tablespoon warm milk
Instructions
To cook Peaches:
- Preheat oven to 425°F.
- Cut the peach into small pieces but not too thin (about 1 cm). Transfer into a large bowl and season with sugar and lemon juice. Place the peach mixture into a large baking dish and cook for 10 minutes.
To make Batter:
- In a medium mixing bowl, stir together all-purpose flour, baking powder, salt, sugar, vanilla extract, and cinnamon. Blend in butter until mixture resembles coarse meal, add milk until combined.
To Cook the Cobbler:
- Remove peaches from the oven. Use a cookie dough spoon or regular spoon to scoop out a small amount of batter to spread over the peaches. Perfection is not needed during this process because the topping will spread as it bakes.
- Lower the oven temperature to 375°F
- Bake the peach cobbler for about 30 minutes or until topping is golden.
