Spicy Smoked Sausage Soup

Ingredients

  • 3-4 FARMER JOHN Red Hots Extra Hot! Smoked Sausage links
  • ¼ cup olive oil
  • ½ onion chopped
  • 1 red bell pepper chopped
  • 1 jalapeno seeded and chopped
  • 1 garlic clove minced
  • ½ cup chopped carrots
  • ¾ - 1 cup chopped zucchini
  • ½ tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon Mexican oregano
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 1 can diced fire roasted tomatoes
  • 4 cups low sodium chicken broth
  • 1-2 chicken stock cubes
  • 1 tablespoon TABASCO® brand Green Chili Pepper or use more according to your liking
  • ½ cup corn
  • salt and pepper to taste
  • 1 bag of MISSION Tortilla Chips
  • chips to serve
  • avocado to serve
  • cilantro to serve

Method

  1. Heat the olive oil in a large pot. Add the chopped onion and red bell pepper, cook and stirring occasionally for about 5 minutes or until the onions are soft and translucent.
  2. Add jalapeño and garlic. Cook for about 1 minute.
  3. Add carrots, chopped zucchini and the FARMER JOHN Red Hots Extra Hot! Smoked Sausage and stir for about 1 minute.
  4. Add chili powder, cumin, Mexican oregano, smoked paprika, black pepper and cayenne pepper. Cook and keep stirring for about 1 or 2 minutes, or until fragrant.
  5. Stir in the fire roasted tomatoes, low sodium chicken broth, chicken stock cubes. Bring to a boil, reduce to heat and simmer for about 20 minutes.
  6. Add TABASCO® brand Green Chili Pepper and corn. Keep stirring and continue cooking for 2-3 minutes. Taste and season with an (optional) Tabasco, salt and pepper according to your liking,
  7. Transfer to a bowl, garnish with fresh cilantro, lime wedge, and serve with MISSION Tortilla Chips.
