Spiralized Zucchini and Corn on the Cob Salad

Ingredients
 

  • 1 Zucchini
  • 1 Corn Cob boiled
  • ½ cup of Cherry Tomatoes
  • cup Olive Oil
  • 2 tablespoons Fresh Lemon Juice
  • Salt/Pepper

Method

  1. Whisk olive oil, lemon juice, salt/pepper in a bowl and set aside
  2. Use the vegetable spriralizer and to cut zucchini into long spirals
  3. Cut cherry tomatoes in half
  4. Boil corn for about 7-8 minutes in unsalted water
  5. Mix tomatoes, zucchini, corn in a bowl and drizzle with salad dressing
