  • 10 ounces andouille sausage
  • 1 lb chicken breast cut into 1 inch pieces
  • 2 medium onions chopped
  • 2 cups celery stalks diced
  • 1 cup green bell pepper diced
  • 1 oz can crushed tomatoes 14
  • 1 1/2 cups white long grain rice
  • 2 leaves dried bay
  • 1 tablespoon vegetable oil
  • 4 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 3 cups chicken stock
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons garlic powder
  • 2 1/2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  1. Season the chicken with cayenne pepper, garlic powder, paprika, black pepper, onion powder, oregano and thyme.
  2. Heat 1 tablespoon vegetable oil in a large heavy Dutch oven over medium heat. Cook chicken until browned all over.
  3. Add celery stalks, onion, bell pepper then cook for 3 minutes
  4. Add garlic, tomatoes, bay leaves, Worcestershire. Stir in rice and slowly add broth
  5. Add andouille sausage then reduce heat, simmer, uncovered for about 15 minutes or until rice and chicken are cooked through

    Jambalaya has never been my favorite because of what goes in it. But everything you make on this blog just looks outstanding and I need to try it.

    What I love about jambalaya is that you just toss everything in the pot and that’s it. So packed with flavor and quite filling too. I also like that it’s spicy. Thanks for the recipe!

    I am on a meat fast most meats apart from chicken…so I love this easy chicken Jambalaya recipe woot. I can make some delishh sunday roasts with this jambalaya…and it has some green yayy!
