Here's one of my favorite slow cooker recipes. Hearty Chicken Stew in Slow Cooker. Our family loves chicken meals, especially stew recipes. My husband is a huge fan of trying different chicken dinners, and this recipe is something that I know he’ll like. Last week, I was staring at my kitchen’s ceiling, thinking of something to cook, something irresistible. Fortunately, this came to mind and without waiting I hurriedly gather my ingredients and started to cook this meal. I called it “Hearty Chicken Stew”, a dish that I actually cooked for seven hours! Yes, I cooked it that long, but it is worth the wait. Slow cooker recipes are amazing when you have the time, and it’s always so worthwhile when you try the juiciness of the meat. The flavors all blend together in a positive way, and the process makes me savor the taste of each bite even longer.
I decided to name this dish “Hearty Chicken Stew” because you need a huge heart to prepare and cook this meal! It is not that hard, it just requires a little patience and time. My kids loved this recipe too… I was trying to think back to when I was a kid and when I tried my first stew. I had a lot of soup as a youngster but stews were introduced later in life, except for maybe some that was out of a can. Homemade stews from a slow cooker or hot pot are the best, far better than anything you can buy at a restaurant or premade in the store.
All of the ingredients are very basic, and nothing is foreign. I bet that you have the ingredients in your kitchen and pantry. If-not, they are very easy to find in the grocery. If you are planning to serve it for dinner, it’s best to prepare it right after breakfast. It is perfect with rice, bread, or nacho chips as each of them soaks up the taste. It’s casual but can still work when you have company as it dresses up well enough in the right bowl. Ingredients
- 1 pound boneless chicken thighs
- 2 tablespoons olive oil
- 1 medium onion, {chopped}
- 2 cups potatoes, {washed, peeled and quartered}
- ¼ teaspoon smoked paprika
- ½ teaspoon oregano
- ½ tablespoon cumin powder
- 2 tablespoons capers, {drained}
- 1 (28 oz) can diced tomatoes, {unsalted}
- ½ cup dry white wine
- 1 cup pimento olives, {pitted, drained}
- 1 teaspoons garlic, {minced}
- 2 bay leaves
- salt/pepper to taste
Instructions
- In a large skillet, heat the oil over medium high heat. Sprinkle the chicken with salt/pepper and cook until browned. Remove the chicken from heat and put it into the slow cooker.
- Add onions into the same skillet, keep stirring until lightly browned or tender.
- Add onions, potatoes, paprika, oregano, cumin powder, capers, diced tomatoes, white wine, pimento olives, garlic and bay leaves into the slow cooker.
- Cook on low heat for 7-8 hours or high heat for 4 hours. About 30 minutes before serving time, shred the chicken into small pieces and put the chicken back into the slow cooker. Mix well. Season with salt/pepper to taste.
- To serve: Garnish with parsley, mint or other fresh herbs of your choice.

This looks so tasty! I love anything that I can put in my slow cooker - but I love how pretty this dish is - sometimes stuff from the slow cooker doesn't look the best even though it tastes great but this is gorgeous!
