Delicious chia pudding with almond milk, topped with creamy banana and avocado. A healthy breakfast, snack or dessert option that is high in fiber and protein, the perfect alternative to yogurt or smoothies.
This Chia pudding recipe is made with a great combination of unsweetened almond milk, and a small amount of Left Field Farms Non-GMO Creamer to balance with just a bit of sweetness. It really works for any time of day and is healthy and filling but is tasty enough to be a dessert or snack. It can be prepared one day ahead and be stored in the fridge for up to 5 days. The creamy banana and avocado blend can be served by itself, with nuts or fresh fruit. It is so tasty, my kids couldn't stop eating this pudding! The secret? The perfect chia pudding ratio, 3:1 (or ¼ cup chia seeds with ¾ cup liquid, like almond milk, cashew milk or coconut milk). If you have some left over almond milk, be sure to make this delicious Vegan Roasted Bell Pepper Soup.
This delicious chia pudding offers a ton of health benefits. Chia seeds are a great source of healthy omega-3 fatty acids (which are important for the brain’s health, and also protect the heart by lowering blood pressure, bad cholesterol and inflammation). With additional protein, fiber, antioxidants, carbohydrates and calcium chia seeds are really a wonder-food. They are very easy to digest when prepared properly and have become one of the most popular superfoods. While chia seeds offer a ton of health benefits, there isn't much flavor to them, although they do add a nice texture and crunch to any recipe.
I had made quite a few avocado shakes and smoothies and of course many with banana as well. They both give a smooth, thickness and taste that adds a whole other dimension. I started bringing the two together and loved their combined taste. Now I’m expanding that taste out to puddings and other desserts and am quite pleased with the results. I’ve spoken before about my husband and his battles with healthier eating choices. This pudding is an absolutely perfect option for him not only because it cures his sweet tooth craving with very healthy ingredients, but also because it fills him up with its thick consistency. That keeps him from going to the vending machine which is music to my ears.
To make this protein packed superfood breakfast meal of chia pudding: First stir in a great ratio amount of almond milk, chia seeds, and optional sweetness like maple syrup or Left Field Farms Non-GMO Creamer, plus ground cinnamon. Next, place the mixture in a medium size mason jar and let it soak in the fridge for at least 20 minutes or overnight for even better results. In this recipe, I opted for the caramel flavor of Left Field Farms Non-GMO Creamer.

Oooh I love chia pudding! I'm definitely going to try this recipe out the next time I make chia pudding. I'll have to figure out where I can get the Left Fields creamer. I live in NYC so we don't have Walmart around here. Hopefully Whole Foods carries it!

I love the brand name"Left Field". I might have to do some more experimenting with chia. I love chai tea, but that's about it as far as my knowledge of what to do with it. This looks great.
