I made this kale salad in a big batch and my husband packed up some of the leftovers for lunch. Just be sure to pour in the dressing before serving as it keeps the freshness of the kale and other healthy toppings for this salad. For this recipe, I used a combination of dried cranberries, unsalted almonds, tomatoes and fresh mangos. I called this a “Superfood Salad”.

- 1 bunch curly kale salad cut thinly and chop finely
- 1/4 cup slivered almonds
- 1/4 cup dried cranberries
- 1/4 cup fresh mangoes cut into small pieces
- 1/2 cup plum tomatoes
