    Today, I am going to share a fun recipe using all my mystery basket ingredients from the Chopped at Home Challenge with Arla®. Mediterranean Garden Chicken Sandwich.

    Mediterranean Garden Chicken Sandwich

    Mediterranean Garden Chicken Sandwich Ingredients: 

    This chicken sandwich recipe is inspired by Mediterranean flavors, because one of the main ingredients I used is a Mediterranean Garden cream cheese from Arla®. I spread each piece of  bread with generous amount of Arla cream cheese, then stacked it with fresh garden vegetables: lettuce, sprouts, spinach, roasted red bell pepper, pepper pickle, fresh sliced tomatoes, and a tender and juicy grilled chicken breast.  Healthy, fast, scrumptious.

    To showcase my creativity and take part in the Chopped at Home Challenge, I chose this Mediterranean chicken sandwich because it’s simply delicious, made of fresh ingredients and would be perfect for any occasion, snack, lunch or a friends and family gathering.  One of the best parts about it is that it’s kid-friendly (my kids loved it), but not a kids meal that only they’d enjoy.

    Mediterranean Garden Chicken SandwichWhen we spread Arla cream cheese onto a piece of bread you instantly see that it has a whipped-like texture that’s completely different from the heavier cream cheeses that many of us are used to.  This isn’t just for show, that whipped consistency and taste is absolutely dreamy and can perfectly compliment a simple piece of bread or an ensemble of complex flavors.

    The fun part of this Mediterranean Garden Chicken Sandwich recipe is you can build your own as you go, meaning that you can prepare all of the ingredients, place them in a container, store it in the fridge and build the sandwich whenever you are ready to eat it.

    Arla cream cheese is an essential to have in the kitchen. Arla cream cheese comes in many delicious varieties: Original, Herbs & Spices, Blueberry, Mediterranean Garden, Strawberry and Skyr. All cream cheese flavors come in a 7oz. tub, but Strawberry and Original also come in squeeze tubes. They are not only a better-for-you cream cheese spread, but a simple and tasty addition to lunch and dinner options as well.  Arla cream cheese is free from artificial flavors, preservatives, thickeners and stabilizers, so you can feel good about feeding it to the entire family.

     

    Be sure to enter the Chopped at Home Challenge. This contest is running on FoodNetwork.com in partnership with Arla. Users will be asked to enter using the four mystery basket ingredients – Arla cream cheese (any flavor), chicken breast, baby spinach and roasted red bell pepper – to create an original dish. Contestants will be required to upload a description of the recipe along with a photo of the finished dish that includes the Arla packaging in the shot. The winner will be selected based on appetite appeal (35%), creativity and incorporation of basket ingredients (15%), appearance and presentation (15%) and clarity of dish description (35%). There will be one grand prize winner that will received $5,000 cash and a gift basket containing Arla products and helpful kitchen items worth an estimated $350. The contest will run from 9:00 AM EST on 4/10/18 to 4:59 PM EST on 6/1/18.

    Ingredients
     

    • 3 8 oz chicken breasts, cut in half and flatten with mallet.
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    • Cheese of your choice
    • Lettuce
    • Roasted Red Bell Pepper {store bought or homemade - recipe below}
    • Fresh tomatoes
    • Lettuce
    • Pepper pickle
    • Sprouts
    • Mediterranean Garden cream cheese from Arla®

    Instructions
     

    • Preheat the grill over medium heat. 
    • Season the chicken with salt and pepper. Cook the chicken for about 4 minutes on each side.

    To build a sandwich:

    • Lay 3 slices of bread on a cutting board and spread with some Mediterranean Garden cream cheese from Arla®.
    • On first layer, add some fresh lettuce, roasted red bell pepper, and lettuce.
    • On second layer, add some spinach or lettuce leaves, sprouts, pepper pickle, grilled chicken, fresh tomatoes, cheese of your choice, lettuce and top with another slice of bread. 

    Notes

    Roasted Red Bell Pepper recipe: 
    4 red bell pepper, washed 
    cooking spray 
    Heat the oven to 425 F 
    Place the red bell pepper (as a whole or cut with seeds removed) on a cookie sheet coated with olive oil cooking spray. 
    Bake for about 15 minutes or until the skin is blistered. 
    Remove from the heat.

      Woman favorite kind of food is Mediterranean! They just have so much flavor in everything that they make. I would love to make the sandwich for myself for lunch. In fact I think I might.

      I love all the varieties of Arla Cream cheese! Its just they have one for every need! I am going to try this chicken sandwich recipe. My husband and children would enjoy this. They love chicken and cheese! Now if this sandwich had bacon in it, they'd go nuts!

      That's my kind of sandwich! I love eating more salad and sandwiches during the warmer months because they're lighter. Arla's cream cheeses sound so good! Can't wait to make recipes with those!
