- 1 (4 oz) small apple, (cut into matchsticks)
Sweet and Tangy Dressing:
- 1½ tablespoons champagne vinegar, (Napa Valley, 7% acidity) or use apple cider vinegar 5% acidity
- 3 tablespoons extra virgin olive oil
- ½ teaspoon Dijon mustard
- 3 teaspoons pure maple syrup, (use 2 teaspoons of the less sweet version or if you are using apple cider vinegar with 5% acidity)
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Optional Toppings:
