Low Carb Creamy and Cheesy Creamed Spinach. The perfect side dish for any meal
- 2 pounds fresh baby spinach
- 1 1/2 cups heavy cream
- 4 ounces cream cheese
- 1/4 cup butter
- 3 tbsp chopped shallots
- 2 tbsp chopped garlic
- 1 cup freshly grated parmesan cheese (lightly packed)
- 1/2 tsp salt (use more according to your liking)
- 1/4 tsp black pepper (use more according to your liking)
Melt butter in a large skillet over medium heat and cook shallots, garlic until fragrant for about 2 minutes.
Add heavy cream, cream cheese, salt, and pepper, stir and bring it to a simmer for about 2-3 minutes. Be sure to stir constantly until the sauce is smooth and creamy.
Add spinach and parmesan cheese. Cook until the spinach is wilted for about 5-7 minutes.
Turn off the heat and enjoy immediately with your favorite meals.
