This creamed spinach recipe called for heavy cream as one of the main ingredients. For a non-dairy option, you may use coconut milk or even almond milk instead of heavy cream. If you decide to use almond milk, you may need to add flour to thicken the sauce since almond milk is mostly water and has a thin consistency.

Easy Keto Creamed Spinach
Ingredients
- 2 pounds fresh baby spinach
- 1 ยฝ cups heavy cream
- 4 ounces cream cheese
- ยผ cup butter
- 3 tablespoon chopped shallots
- 2 tablespoon chopped garlic
- 1 cup freshly grated parmesan cheese, (lightly packed)
- ยฝ teaspoon salt, (use more according to your liking)
- ยผ teaspoon black pepper, (use more according to your liking)
Instructions
- Melt butter in a large skillet over medium heat and cook shallots, garlic until fragrant for about 2 minutes.
- Add heavy cream, cream cheese, salt, and pepper, stir and bring it to a simmer for about 2-3 minutes. Be sure to stir constantly until the sauce is smooth and creamy.
- Add spinach and parmesan cheese. Cook until the spinach is wilted for about 5-7 minutes.
- Turn off the heat and enjoy immediately with your favorite meals.
