Try this Keto spinach salad recipe. This Korean Spinach Salad is one of the basic Korean vegetable side dishes and is traditionally served with a Korean meal (like Chapchae, Kimbap,  Bibimbap, or this Asian bowl). The seeds are always toasted before serving for a boost of flavor.

Ingredients
 

  • 8 ounces fresh spinach
  • 4 cups water
  • 1 clove garlic, minced
  • 1 green onion, chopped
  • teaspoons soy sauce
  • teaspoons sesame oil
  • 2 teaspoons toasted sesame seeds
  • ¼ teaspoon salt, (optional)

Instructions
 

  • Wash the spinach thoroughly under running cold water. Rinse twice and cut the root ends of spinach.
  • Boil 4 cups of water on high heat in a large pot. Blanch the spinach for 30 seconds.
  • Remove the spinach from the heat and rinse in cold water a couple of times. Squeeze out excess water from the spinach with hands.
  • In a medium mixing bowl, add minced garlic, green onion, soy sauce, sesame oil, and sesame seeds. Add salt according to your liking. Add spinach and mix well.

    I have absolutely got to try blanching spinach. I always sautée it but the problem is I don't have a big enough skillet to make enough so that when it cooks down it's any kind of substantial portion. I think you just brought a lot more spinach into my life!

    Does this recipe keep at all or should it be eaten right after making?

      Hi Sharla, you can put the cooked spinach in an airtight container and put in the fridge for up to 3 days. You should discard any cooked spinach that has been left out for more than 2 hours at room temperature. Does that answer your question? If not, please let me know.

    I had this type of spinach when I visited Indonesia this past December. Not sure if is the same veggie but it looks very similar. I loved it and can't wait to try this recipe!
