    Making your own Caesar salad dressing isn't difficult. It's actually a cheaper and healthier way to make an entire salad tastier.  The best thing about making your own salad dressing is that you can customize some of the ingredients to your liking, and to fit your dietary needs.

    You can make this salad dressing for a single salad fresh every time.  You can also whip up a bigger batch that can last up to a week in your refrigerator.

    The Ingredients

    This Caesar salad dressing is made of olive oil, mayo, Worcestershire sauce, anchovies, garlic, dijon mustard, and parmesan cheese. The anchovies add a tasty umami flavor to the dressing. but they are not overpowering.

    Anchovies: I used the oil-packed anchovies fillet. You can find the canned or bottled anchovies fillet for around $2.99 at any grocery market.

    The best substitute for anchovies fillets is anchovies paste. 1 anchovy fillet = ½ teaspoon anchovy paste.

    • Finely chop the anchovies fillet and garlic.
    • Combine all the ingredients in a jar or bowl and whisk until smooth.

    The best way to store salad dressing is to keep it in an airtight container with a lid. Also, do not store the dairy-based salad dressing on the fridge door because the average temperature will rise during opening and closing the door.

    • 1½ cups mayonaise
    • 4 oil-packed anchovies fillet, (finely chopped)
    • 3 tablespoon grated Parmigiano-Reggiano, (add more according to your liking)
    • 1 tablespoon lemon juice
    • 1 garlic clove, (finely minced)
    • ¾ teaspoon dijon mustard
    • ½ teaspoon Worcestershire sauce 
    • salt and black pepper, (to taste)

    Instructions
     

    • Combine all the ingredients in a jar or bowl and whisk until smooth. Taste and adjust the seasoning with salt, black pepper, or extra cheeses according to your liking.
