Homemade Dry Rub Seasoning:
The secret of a tasty pork rib is a having a great seasoning blend. The pork rib is seasoned with the best homemade dry rub seasoning, Memphis-style.
This dry rub BBQ seasoning is made from everyday spices and herbs that you probably have in your pantry.
Dry Rub Seasoning Ingredients:
So here's the list of all the ingredients I used to make the Memphis-style dry rub seasoning: smoked paprika, chili powder, ground cumin, garlic powder, onion powder, ancho chili powder, cayenne pepper, ground mustard, light brown sugar, dried oregano, ground ginger, black pepper, and salt.
I only used a small amount of sugar (2 tsp). Feel free to add more according to your taste (up to 2 tablespoon per recipe) if you like to be on the sweeter side.
This DIY dry rub seasoning isn't only good for ribs, but would also be good for chicken wings or thighs, brisket, pork chops, or tofu!
How to Prepare Ribs for Dry Rub:
The marinating process is optional. You can apply this seasoning mixture to the ribs ahead of time or add it right before the cooking process. However, to get the most flavor you may want to apply the rub at least an hour before cooking.
Removing the Membrane from the Ribs:
Another important thing to remember is that you need to peel away the membrane from the back of the ribs to ensure the meat is as tender as possible. If left on, this silverskin will keep the seasoning from penetrating the meat.
The removal of the membrane is pretty easy. Simply slide a knife under the silverskin anywhere, lift it and start pulling it off from the ribs. If it's too slippery, you can grab the membrane with a paper towel.
Some companies sell ribs that come with the membrane peeled off from the meat (I believe Costco's pork ribs are one of them).

How to Cook the Best Dry Rub Ribs in an Instant Pot:
The preparation and cooking process of Dry Rub Ribs in an instant pot is actually pretty simple. Here are some of the most important steps to follow:
· First, remove the membrane and cut the ribs into three parts (so they can fit into the pot).
· Next, rub the ribs with the homemade dry rub seasoning blend. You can cook it right away, but many people marinate for at least an hour. I cooked it immediately this time and the result was still amazing!
· After that, cook for about 25 minutes if you are using the baby back ribs or 30-35 minutes for regular ribs.
· Then, once the cooking cycle is finished, do a quick release. Please follow the manufacturer's guide for doing the quick release safely.
· For the last step, you’ll need to broil the ribs in the oven until slightly charred. or crisp at 400°F for 15 minutes if you are using a Ninja Foodi.
Also, don't throw away the broth! It packed with flavors! You can use it as a soup base, such as meatball soup, etc. So delicious!

Instant Pot Ribs
Ingredients
- 1 rack pork ribs , (about 2.5 pounds)
Dry Rub Seasoning:
- 1 tablespoon paprika
- 2 teaspoon brown sugar, (or add more sugar according to your liking, up to 2 tablespoon max per recipe if you like it to be on the sweeter side)
- 2 teaspoon chili powder
- 2 teaspoon ground cumin
- 2 teaspoon garlic powder
- 1½ teaspoon onion powder
- ¼ teaspoon ancho chili powder
- ½ teaspoon cayenne pepper
- ½ teaspoon ground mustard
- ½ teaspoon ground ginger
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- 2 teaspoon sea salt (or about 2½ teaspoon coarse Kosher salt), (use more or less salt according to your liking)
Optional:
- 1 tablespoon liquid smoke
Instructions
- Rinse the ribs and pat them dry. Remove the membrane (if any) and cut the ribs into three parts so they can fit into the pot.
- In a small bowl, mix together all the dry rub seasoning ingredients until combined.
- Place the ribs in a large bowl or zip lock. Rub the ribs with the homemade dry rub seasoning blend. Be sure to coat all sides, front and back of ribs with rub.
Cooking Instructions for Instant Pot Users:
- Pour ¾-1 cup of water into Instant Pot® plus 1 tablespoon of liquid smoke and add a trivet or a steamer basket. Place the pork ribs into the trivet or steamer basket. Make sure the ribs are not touching the water!
- Close the lid and make sure the pressure release valve is in the SEAL position. Select PRESSURE COOK and set HIGH.Set time to 25 minutes for baby back ribs or 30-35 minutes for regular spare ribs. Select START/STOP to begin.
- When the cooking cycle is done and beeps, let the pressure release naturally for 5 minutes for baby back ribs or let the pressure to naturally release completely for spare ribs.Turn the PRESSURE RELEASE valve to the VENT position.
- Arrange the ribs on the wire rack one above center position inside the broiler. Cook until crisp for a few minutes (about 3 minutes). Watch carefully and do not burn!
- When the internal temperature reaches 185-190°F, cooking is complete and ribs are ready to serve with or without BBQ sauce.
Cooking Instructions for Ninja Foodi Users:
- Pour a cup of water plus 1 tablespoon of liquid smoke into the pot. Place ribs into the Cook & Crisp™ Basket and place basket in the pot.
- Close the lid and make sure the pressure release valve is in the SEAL position. Select PRESSURE COOK and set HIGH.Set time to 25 minutes for baby back ribs or 30-35 minutes for regular spare ribs. Select START/STOP to begin.
- When the cooking cycle is done and beeps, let the pressure release naturally for 5 minutes for baby back ribs or let the pressure naturally release completely for spare ribs.Turn the PRESSURE RELEASE valve to the VENT position.
- Make sure that your inner pot is dry. Close crisping lid. Select AIR CRISP, set temperature to 400°F, and set time to 15 minutes. Select START/STOP to begin.Open every 3-5 minutes to check for the crispness of your desire.
- When internal temperature reaches 185-190°F, cooking is complete and ribs are ready to serve with or without BBQ sauce.
